All our cuttlefish is pot caught in season during April and May when they have fully grown. Pot or trap caught cuttlefish is an ethical way of harvesting this delicious fish that has very similar flavour and texture profile to squid.
The cuttlefish is preserved in a rich, beautifully balanced sauce using its own ink.
